This Simple Greek Salad is authentic, fresh, and bursting with Mediterranean flavor! Large chunks of crisp vegetables, briny olives, creamy feta, and a simple oregano dressing. Ready in just 10 minutes!

Step 1 – Prepare Vegetables Cut cucumbers into 1-inch chunks. Cut tomatoes into wedges. Thinly slice red onion. Cut bell pepper into 1-inch chunks. Cut feta into large cubes (don’t crumble).
Step 2 – Make Dressing Whisk olive oil, red wine vinegar, lemon juice, minced garlic, oregano, salt, and pepper in small bowl. Set aside to let flavors meld.
Step 3 – Assemble Add cucumbers, tomatoes, onion, bell pepper, and olives to large serving bowl. Place feta cubes on top (don’t mix in yet). Pour dressing over salad. Toss gently just before serving. Be careful not to break up feta too much.
Step 4 – Serve Garnish with extra oregano if desired. Serve immediately at room temperature. Don’t refrigerate dressed salad.
