This baked buffalo cauliflower gnocchi is crispy on the outside, tender inside, and coated in spicy buffalo sauce. Served with a cool and creamy Greek yogurt ranch dip, it’s the perfect vegetarian comfort food — baked, not fried!

Step 1 – Preheat Oven Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Step 2 – Toss Gnocchi & Cauliflower In a large bowl, toss gnocchi and cauliflower with olive oil, garlic powder, paprika, salt, and pepper.
Step 3 – Bake Spread evenly on baking sheet. Bake for 20–25 minutes, flipping halfway, until crispy and golden.
Step 4 – Buffalo Sauce Remove from oven and toss immediately with buffalo sauce until evenly coated.
Step 5 – Make Ranch Dip Mix Greek yogurt, lemon juice, dill, garlic powder, and salt until smooth.
