Honey Lime Glaze
- Raw Honey1/4 Cup
- Fresh Lime Juice2 Large Limes
- Lime Zest1 tbsp
- Red Pepper Flakes1/2 tsp
- Cilantro (Chopped)For Garnish
The instruction
The Marinade: In a large artisanal bowl, whisk together the honey, lime juice, lime zest, minced garlic, olive oil, and red pepper flakes. Place the chicken thighs in a large zip-top bag and pour half the marinade over them. Save the other half for basting.
The Chill: Let the chicken marinate for at least 30 minutes in the fridge. This allows the lime juice to break down the fibers, ensuring every bite is tender.
The Grill: Preheat your grill to medium-high heat. Lightly oil the grates. Grill the thighs for 5-6 minutes per side. During the last 3 minutes of cooking, brush the reserved honey-lime glaze generously over the chicken.
Rest & Garnish: Remove the chicken when the internal temperature hits 165°F. Let it rest for 5 minutes to lock in the juices. Garnish with fresh cilantro and extra lime wedges before serving.
