These Banana Bread Coffee Cake Muffins are soft, moist, and bursting with banana flavor, topped with a crunchy cinnamon streusel. Perfect for breakfast or a sweet snack!

🍌 Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 tsp vanilla extract
  • For streusel: ¼ cup flour, ¼ cup brown sugar, 2 tbsp butter, 1 tsp cinnamon

Step 1 – Preheat Oven Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
Step 2 – Mix Dry Ingredients In a bowl, whisk together flour, baking soda, and salt.
Step 3 – Mix Wet Ingredients In a large bowl, combine melted butter, brown sugar, eggs, mashed bananas, and vanilla.
Step 4 – Combine Gently fold dry ingredients into wet ingredients until just combined. Do not overmix.
Step 5 – Add Streusel & Bake Divide batter into muffin cups. Sprinkle streusel on top. Bake 22–25 minutes until a toothpick comes out clean. Cool slightly before serving.
