Quick and flavorful sheet pan shrimp fajitas with sautéed bell peppers and onions. Perfect for an easy weeknight dinner with minimal cleanup!

🥗 Ingredients

  • 1 lb raw shrimp, peeled & deveined
  • 2 bell peppers, sliced
  • 1 medium onion, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • Salt & pepper to taste
  • Fresh lime wedges and chopped cilantro for garnish

👩‍🍳 Instructions

Step 1 – Preheat Oven Preheat oven to 425°F (220°C). Line a sheet pan with parchment paper.
Step 2 – Prep Vegetables & Shrimp Slice bell peppers and onion. Toss shrimp and vegetables with olive oil, chili powder, paprika, cumin, salt, and pepper.
Step 3 – Bake Spread shrimp and vegetables on sheet pan in a single layer. Bake for 12–15 minutes, until shrimp is cooked through and vegetables are tender.
Step 4 – Serve Garnish with lime wedges and chopped cilantro. Serve with tortillas or over rice.
