- 1 cup Mini Pepperoni slices
- 8 oz Fresh Mozzarella Pearls
- 1 cup Cherry Tomatoes (halved)
- 1/2 cup Black Olives (sliced)
- 1/2 cup Green Bell Pepper (diced)
- 1/4 cup Red Onion (finely diced)
The Zesty Dressing
- 1 cup Italian Dressing
- 1/4 cup Grated Parmesan
- 1 tsp Dried Oregano
- 1/2 tsp Red Pepper Flakes
Assembly Instructions
- Cook the Pasta: Boil the pasta in salted water according to package directions for “al dente.” Important: Rinse immediately under cold water to stop the cooking and prevent stickiness.
- Prep the Mix-ins: While pasta cools, chop your tomatoes, peppers, and onions.
- The Big Toss: In a large bowl, combine the cold pasta, pepperoni, mozzarella, tomatoes, olives, peppers, and onions.
- Dress it Up: Pour the Italian dressing over the salad. Add the Parmesan, oregano, and red pepper flakes. Toss until every noodle is coated.
- Chill: For the best flavor, let it sit in the fridge for at least 30 minutes before serving.
