The Spicy Cajun Wings

  • 2 lbs Chicken Wings (flats & drumettes)
  • 2 tbsp Cajun Seasoning (salt-free preferred)
  • 1 tbsp Baking Powder (for crispiness)
  • 1 tbsp Olive Oil
  • 1/2 tsp Salt (adjust if seasoning has salt)

Avocado Cilantro Lime Sauce

  • 1 Ripe Avocado
  • 1/4 cup Greek Yogurt or Sour Cream
  • 1/4 cup Fresh Cilantro (stems removed)
  • 1 clove Garlic, minced
  • 1 tbsp Lime Juice
  • Salt & Pepper to taste

Step-by-Step Instructions

  1. Dry the Wings: Pat wings thoroughly dry with paper towels. Moisture is the enemy of crispiness!
  2. Season: In a large bowl, toss wings with olive oil, cajun seasoning, and the baking powder until evenly coated.
  3. Bake: Arrange wings on a wire rack set over a baking sheet. Bake at 425°F (220°C) for 35-40 minutes, flipping halfway, until golden and crispy.
  4. Blend Sauce: While wings bake, place all sauce ingredients in a blender or food processor. Pulse until completely smooth. Add a teaspoon of water if you prefer a thinner dip.
  5. Serve: Toss wings in extra cajun spices if desired and serve hot with the chilled sauce.

Chef’s Tip: Using a wire rack allows hot air to circulate under the wings, preventing them from getting soggy in their own juices.
