INSTRUCTIONS

Cook Turkey:

  1. Heat olive oil in large skillet over medium-high heat
  2. Add ground turkey, breaking into small crumbles with spoon
  3. Cook 5 minutes, stirring occasionally
  4. Add minced garlic, oregano, cumin, paprika, salt, and pepper
  5. Continue cooking 2-3 minutes until turkey is fully cooked (165°F internal temp)
  6. Turkey should be browned and crumbly

Prepare Vegetables:

  1. Dice cucumbers into bite-sized pieces
  2. Halve cherry tomatoes
  3. Thinly slice red onion
  4. If desired, soak onion slices in cold water 10 minutes to reduce sharpness
  5. Pit and halve olives
  6. Crumble feta cheese

Assemble Bowls:

  1. Divide cooked rice among 4 bowls (about ¾ cup each)
  2. Top each with portion of cooked turkey
  3. Arrange cucumbers, tomatoes, onions, and olives in sections
  4. Sprinkle feta cheese over top
  5. Drizzle generously with tzatziki sauce
  6. Garnish with fresh dill
  7. Serve with lemon wedges

Meal Prep Instructions:

  • Store rice and turkey together in containers
  • Keep vegetables, feta, and olives in separate container
  • Store tzatziki separately
  • Assemble when ready to eat
