The perfect “Hail Mary” for your party menu. All the flavors of a jalapeño popper—creamy cheese, spicy peppers, and smoky bacon—shaped into a football and ready for kick-off.

The Roster (Ingredients)

  • 16 oz Cream Cheese (softened)
  • 2 cups Sharp Cheddar (shredded)
  • 3 Jalapeños (seeded & minced)
  • 8 slices Bacon (cooked & crumbled)
  • 1/2 tsp Garlic Powder & Onion Powder
  • 1/2 cup Green Onions (sliced)
  • 1 slice White Cheese (Provolone or Mozzarella for laces)

Game Plan (Instructions)

  1. Blitz the Base: In a large bowl, mix softened cream cheese, cheddar, minced jalapeños, green onions, and spices until well combined.
  2. Form the Shape: Scoop the mixture onto a sheet of plastic wrap. Fold the wrap over and use your hands to mold the cheese into an oval “football” shape.
  3. Chill Out: Refrigerate for at least 1 hour (or overnight). A cold cheese ball holds its shape better during the coating process.
  4. Add the “Pigskin”: Remove the plastic wrap and roll the cheese ball in the crumbled bacon bits until completely coated. Press the bacon gently into the cheese so it sticks.
  5. Lace It Up: Cut thin strips of the white cheese slice. Lay one long strip down the center and several short strips across it to create the football laces.
  6. Kick-Off: Serve on a platter surrounded by crackers, pretzels, or celery sticks.

Pro Tip: Want a smoother “skin”? Mix some finely chopped pecans in with the bacon crumbs. It adds a great crunch and fills in the gaps between the bacon pieces!
