Easy Lemon Roasted Shrimp Cocktail | Oven-Baked Appetizer

Lemon Roasted Shrimp Cocktail | Modern Party Classic

Forget the bland, rubbery boiled shrimp of the past. Roasting shrimp at a high temperature caramelizes the edges and locks in the citrus notes, creating a gourmet appetizer in under 10 minutes.

8-10 Minutes Protein Packed Zesty AF

The Coastal Ingredients

  • 1 lb Jumbo Shrimp (peeled, tail-on)
  • 2 tbsp Extra Virgin Olive Oil
  • 1 Lemon (zested & sliced)
  • 2 cloves Garlic (minced)
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Kosher Salt & Black Pepper
  • Cocktail Sauce (for dipping)

The Roasting Method

  1. Preheat: Set your oven to 400°F (200°C).
  2. Season: On a large sheet pan, toss the shrimp with olive oil, lemon zest, garlic, oregano, salt, and pepper. Arrange in a single layer.
  3. Add Citrus: Scatter the lemon slices over the shrimp. These will release juice as they roast, flavoring the seafood.
  4. Roast: Bake for 8–10 minutes, just until the shrimp are pink and opaque. **Do not overcook**, as shrimp can turn tough quickly.
  5. Cool & Serve: You can serve these warm right off the pan, or chill them in the fridge for a traditional cold shrimp cocktail experience.

Chef’s Secret: For the best texture, pat the shrimp completely dry with paper towels before adding the oil and spices. This ensures they roast rather than steam!
