INSTRUCTIONS
Cook Turkey:
- Heat olive oil in large skillet over medium-high heat
- Add ground turkey, breaking into small crumbles with spoon
- Cook 5 minutes, stirring occasionally
- Add minced garlic, oregano, cumin, paprika, salt, and pepper
- Continue cooking 2-3 minutes until turkey is fully cooked (165°F internal temp)
- Turkey should be browned and crumbly
Prepare Vegetables:
- Dice cucumbers into bite-sized pieces
- Halve cherry tomatoes
- Thinly slice red onion
- If desired, soak onion slices in cold water 10 minutes to reduce sharpness
- Pit and halve olives
- Crumble feta cheese
Assemble Bowls:
- Divide cooked rice among 4 bowls (about ¾ cup each)
- Top each with portion of cooked turkey
- Arrange cucumbers, tomatoes, onions, and olives in sections
- Sprinkle feta cheese over top
- Drizzle generously with tzatziki sauce
- Garnish with fresh dill
- Serve with lemon wedges
