The Hearty Base
- Spanish Chorizo12 oz
- Yukon Gold Potatoes1.5 lbs
- Large Eggs8 Count
- Red Bell Pepper1 Medium
- Yellow Onion1/2 Cup
The Flavor Finish
- Whole Milk1/2 Cup
- Shredded Manchego1 Cup
- Smoked Paprika1 tsp
- Fresh Parsley2 tbsp
- Sea Salt & PepperTo Taste
The instruction
Crisp the Potatoes: Preheat oven to 400°F. Dice potatoes into 1/2-inch cubes. Toss with olive oil, salt, and paprika. Roast on a sheet pan for 20 minutes until edges are golden and crisp.
Sauté the Chorizo: In a skillet, cook the chorizo with onions and bell peppers over medium heat. If using ground chorizo, break it apart; if using links, slice them into coins. Drain any excess fat.
Whisk the Custard: In a large bowl, whisk eggs, milk, and half of the cheese. Season lightly (the chorizo is already salty!). Fold in the roasted potatoes and the cooked chorizo mixture.
The Final Bake: Pour the mixture into a greased 9×13 baking dish. Top with remaining cheese. Bake at 375°F for 20-25 minutes until the center is set and the top is bubbly. Garnish with parsley.
